Pumpkin Squares


1 can Farmer’s Market organic canned pumpkin or pumpkin pie mix
2 cups All-purpose flour
1/2 teaspoon Salt
1 teaspoon Baking powder
1 teaspoon Baking soda
1 1/2 teaspoon Ground cinnamon (omit if using pie mix)
1/2 teaspoon Nutmeg (omit if using pie mix)
4 Egg whites + 1 whole egg
1 1/2 cup Sugar (reduce to 1 c if using pie mix)
2/3 cup Unsweetened applesauce
1/3 c Vegetable oil
1 teaspoon Vanilla extract


Preheat oven to 350ºF. In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In another large bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and vanilla extract. Gradually add the flour mixture to the pumpkin mixture; beat well. Pour batter into a 9x13-inch baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes or until toothpick inserted in center comes out clean. Cool completely in pan before serving.
