This is a great staple that’s ready in minutes.
1/2 cup Farmer's Market Organic Pumpkin
1/2 chopped onion
1/2 chopped celery
2 large garlic cloves minced
2 tablespoons unsalted butter
1 cup chicken broth
2 tablespoons heavy cream
Fresh Parsley and Parmesan for garnish (optional)
In a large skillet cook the onion, celery, and the garlic in the butter over medium heat, stirring, until the onions are translucent. Add pumpkin, broth, cream, nutmeg, and salt and pepper to taste. Simmer the sauce, stirring occasionally, for 10 minutes. Garnish with the parsley and Parmesan.
Serve over al dente pasta.
