Pumpkin Chocolate Chip Pancakes

Wake up to the sweet taste of chocolate and pumpkin with this perfect pancake recipe.  It will make you crave breakfast all day long.

Ingredients

1 cup Farmer's Market Pumpkin
1 cup whole wheat flour
1 cup all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups coconut milk (or fat free milk)
1 egg
1 tablespoon vinegar
1/2 cup semi-sweet chocolate chips
1/4 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon ground ginger
pinch of nutmeg
pinch of ground cloves

Directions

In a large bowl mix together the dry ingredients: flour, brown sugar, spices, baking powder, baking soda, chocolate chips, and salt. In another bowl mix together the wet ingredients: milk, pumpkin, egg, vanilla extract, and vinegar. Slowly add the wet ingredients to the dry. Pour the pancake batter into a heated pan coated with nonstick spray or oil. Cook pancakes for about 2 minutes on each side.

Serve immediately with extra chocolate chips, strawberries, or powdered sugar.
