Pumpkin Chocolate Chip Pancakes

Wake up to the sweet taste of chocolate and pumpkin with this perfect pancake recipe. It will make you crave breakfast all day!

Ingredients

  • 1 cup Farmer's Market Foods Organic Pumpkin
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 3 tbsp brown sugar
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups coconut milk or fat free milk
  • 1 egg
  • 1 tbsp vinegar
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1 pinch nutmeg
  • 1 pinch ground cloves

Instructions

  1. In a large bowl, mix together the dry ingredients. 

  2. In another bowl, mix together the wet ingredients. Slowly add the wet ingredients to the dry.

  3. Pour the pancake batter into a heated pan coated with non-stick spray or oil. Cook pancakes for about 2 minutes on each side. 

  4. Serve immediately with extra chocolate chips, strawberries, or powdered sugar to top.
