Chili, Pumpkin Style

Course Appetizer, Main Course, Side Dish

Ingredients

  • 1 can Farmer's Market Foods Organic Pumpkin
  • 3 pounds lean ground beef or vegetarian substitute
  • 2 cans red kidney beans
  • 2 medium onions, chopped
  • 3 cans diced tomatoes
  • 2 tbsp chili powder
  • 1/4 tsp red pepper
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 bay leaves
  • 1 cup mushrooms

Instructions

  1. Brown ground beef or vegetarian ground beef and drain off excess fat. 

  2. Put ground beef in a large pot, and add remaining ingredients. Cook on low for 1-2 hours, and serve with crackers or cornbread.
