Pumpkin Squares
Ingredients
- 2 c All-purpose flour
- 1/2 ts Salt
- 1 ts Baking powder
- 1 ts Baking soda
- 1 1/2 ts Ground cinnamon (omit if using pie mix)
- 1/2 ts Nutmeg (omit if using pie mix)
- 4 Egg whites + 1 whole egg
- 1 15oz can Farmer’s Market organic canned pumpkin or pumpkin pie mix
- 1 1/2 c Sugar (reduce to 1 c if using pie mix)
- 2/3 c Unsweetened applesauce
- 1/3 c Vegetable oil
- 1 ts Vanilla extract
Directions
Preheat oven to 350f. In a large bowl, sift together flour, salt, baking powder, baking soda, cinnamon, and nutmeg. In another large bowl, beat together eggs, pumpkin, sugar, applesauce, oil, and vanilla extract. Gradually add the flour mixture to the pumpkin mixture; beat well. Pour batter into a 9x13-inch baking dish that has been coated with nonstick vegetable spray. Bake for 30 minutes or until toothpick inserted in center comes out clean. Cool completely in pan before serving.
